The 72-Hour Sourdough Fermentation Process
Hour 0: The Mix — Flour, water, sourdough starter. The long fermentation begins.
Hour 48: The Wait — 48 hours of slow cold fermentation develops deep flavor.
Hour 70: The Boil — Each hand-shaped bagel is boiled for the perfect crust and chew.
Hour 72: The Bake — Straight into the deck oven. Golden, crusty, ready.
